Ingredients:
- Romaine lettuce - 2 heads, chopped
- Croutons - 1 cup
- Parmesan cheese - ½ cup, freshly grated
- Chicken breast (optional) - 2, grilled and sliced
- Caesar dressing - ½ cup (recipe below)
- Anchovies (optional) - 4-6 fillets, chopped

Caesar Dressing:
- Garlic - 2 cloves, minced
- Anchovy paste - 1 teaspoon (or 2 anchovy fillets, mashed)
- Dijon mustard - 1 teaspoon
- Worcestershire sauce - 1 teaspoon
- Lemon juice - 2 tablespoons
- Mayonnaise - ½ cup
- Olive oil - ¼ cup
- Parmesan cheese - ¼ cup, freshly grated
- Salt and pepper - to taste
Instructions:
Prepare the Dressing:
- In a small bowl, whisk together garlic, anchovy paste, Dijon mustard, Worcestershire sauce, and lemon juice.
- Add mayonnaise and olive oil, whisking until smooth.
- Stir in Parmesan cheese and season with salt and pepper.
Assemble the Salad:
- In a large bowl, toss the chopped Romaine lettuce with croutons.
- Add grilled chicken slices if using, and toss gently.
Dress the Salad:
- Drizzle the Caesar dressing over the salad, tossing to coat evenly.
- Top with additional Parmesan cheese, chopped anchovies (if desired), and serve with lemon wedges on the side.
